Thai Style Noodles

Do you ever get that craving to just order some good, greasy Asian takeout?

I know I do, especially after a long week at work…I don’t feel like cooking, I’m hungry and I am at a point where I am craving everything I shouldn’t eat!

That was the case this past Friday in my house …..but I am sticking to my plan to lose the extra holiday weight I adopted.

I was not about to cave so instead I made this healthy alternative that totally hits the spot!

-Thai style brown rice noodles

-1-2 skinless, boneless chicken breasts (depending on number of people you are serving)

-3 tbs. coconut oil

-1 tbsp chopped garlic

-1-2 eggs

-2 cups of your choice of veggies (I used carrots, baby bok choi, bean sprouts and snap peas)

-1/2 cup of water

-Braggs liquid aminos or any low-sodium soy sauce you like

-Fresh lime

Optional: chopped green onion and peanuts to top with



Heat the oil in a large pan over low heat.  Add the garlic and let simmer.

Add the chicken and stir until chicken is completely cooked.

Break the eggs into the pan and continue to stir.

Add the water and noodles.  Let them cook until almost tender then add the veggies and continue to cook until noodles and vegetables are cooked to your liking.

Add soy sauce and stir.  Turn off the heat and top with a squeeze of fresh lime.

Serve with chopped green onions and peanuts on top if desired.
