I am always on the hunt for healthy baking ideas and I refuse to compromise on taste. I love this recipe because it delivers all the ooey gooey banana goodness without the guilt.

Now on to the banana bread squares…..
3 ripe bananas
1 ½ cups almond or coconut flour
1 cup dates, raisins or figs (unsweetened)
1 cup natural whole almonds
½ cup all natural almond butter
¾ cup unsweetened almond or coconut milk
1 ½ tsp baking powder
1 tbs vanilla paste or extract
⅓ cup agave
1 tsp cinnamon
Preheat your oven to 350͒ C. In a blender, mix 2 bananas, dried fruit and whole almonds and blend until a fine paste. Add mixture to a bowl. Next, add in almond butter, almond/coconut milk, baking powder, vanilla extract agave and cinnamon. Mix until even. The mixture will be a liquid consistency. Slowly add in flour and continue to mix all ingredients together. Once all flour is added, texture should be similar to a batter. Grease a shallow rectangular pan with coconut oil and pour in batter. Slice the third banana and place on top of the batter. You can drizzle more agave on top as well. Place in the oven and bake for 40-45 minutes or until a fork comes out of the center clean.
